Why Food Sticks to Stainless Steel (and How Triply Fixes It)
Food doesn’t stick because steel is defective - it sticks because of physics. Understand the physics and sticking becomes optional.
The science in 30 seconds
Proteins bond to metal on contact. On a properly preheated pan, the food’s moisture instantly vaporises, forming a steam barrier (the Leidenfrost effect) - food floats on steam instead of welding to steel. Cold pan + cold oil = sticking, every time.
The technique (memorise this)
- Heat the dry pan on medium for 2-3 minutes
- Water test: flick drops - they should bead and dance, not sizzle flat
- Add oil to the hot pan - it shimmers immediately
- Add food - it should sizzle on contact
- Don’t touch it - proteins release naturally once seared (60-90 seconds)
