Triply Tawa Guide: Roti, Dosa & More on Stainless Steel
A tawa is the most technique-sensitive vessel in the kitchen - and triply’s even heat makes it more forgiving, not less.
Why triply works for tawa
Roti needs even, moderate heat; dosa needs even, controlled heat. Triply’s aluminium core delivers exactly that across the whole surface - no hot-centre raw-edges, the classic single-steel tawa failure.
Roti technique
Medium heat, 3-4 minute preheat. The roti should start spotting in ~30 seconds per side. If it sticks, the tawa was too cool - more preheat, not more oil.
Dosa technique
Medium-high preheat, then cool the surface slightly with a sprinkle of water before batter - this is the restaurant trick for even golden dosa on steel. Wipe, pour, spread, drizzle oil at edges.
Size and care
28-30 cm is the versatile tawa size. Clean like other triply (soap + sponge); tawas develop a seasoned patina - don’t scrub it back to mirror every time, that patina is performance.
