Size guide by family

  • 20-22 cm: 1-2 people, small tadka/sabzi
  • 24-26 cm: family of 3-4 - the most versatile size
  • 28-30 cm: family of 5+, biryani, deep frying

What to check before buying

  1. Weight: a 24 cm triply kadhai should feel substantial (~1.2-1.8 kg). Suspiciously light = thin core.
  2. Full-body triply: sides should be clad, not just the base - check the wall.
  3. Lid fit: no rocking, minimal steam escape.
  4. Handles: firm rivets/welds, comfortable grip, stay reasonably cool.
  5. Induction: test on an induction hob if that matters to you.

2.0-2.5 mm is the sweet spot for kadhai - even heat for slow curries, responsive enough for tadka. Thinner feels tinny; thicker gets heavy for daily lifting.
