Tasra vs frypan
A tasra has sloped, lower sides than a frypan and a wider cooking surface than a kadhai - ideal for sabzi, sautéing and shallow frying where you need surface area plus some depth.
Sizes
18-22 cm for small families; 24-28 cm for family cooking. Wider is better for sautéing - crowding steams instead of sears.
What to check
- Base flatness: sits stable, full hob contact
- Side slope: gentle slope = easy tossing
- Weight balance: shouldn’t tip when half-full
