Handi vs kadhai
Handi: narrow mouth, round belly - traps steam, ideal for dum, biryani, slow curries. Kadhai: wide mouth - better for frying, tadka, quick sabzi. Different geometries, different jobs.
Sizes
2-3 L: family curries. 4-5 L: biryani for gatherings. 6 L+: commercial/catering.
What to check
- Lid seal: dum cooking lives or dies on the seal
- Belly curve: smooth, no flat spots (even heat needs even geometry)
- Base stability: round bellies must still sit flat
