Weight is the fastest quality signal in cookware - and the most misunderstood.
Typical weights
- 24 cm kadhai (2.0 mm): 1.2-1.8 kg
- 24 cm frypan: 0.9-1.4 kg
- 16 cm saucepan: 0.7-1.0 kg
- Heavier gauge (2.5-3.0 mm): add 25-40%
Why weight = quality (mostly)
Weight comes from metal - thicker aluminium core, heavier gauge. A suspiciously light "triply" kadhai has a token core. Lift before you buy.
When heavy is too heavy
Above ~2 kg for a daily kadhai, ergonomics suffer - wrist strain, dangerous pouring. The sweet spot: heavy enough for heat performance, light enough for daily use. That’s usually 2.0-2.5 mm.
