Slightly dished centre. Best for: roti/phulka - the curve focuses heat centrally and supports puffing. The traditional choice for bread.

Flat tawa

Dead flat surface. Best for: dosa, cheela, paratha - batter spreads evenly, full contact. Also better for induction (full hob contact).
